Meal prep – Quick High Protein Lunch with 3 ingredients.

Its a gloomy weather and work from home today. Glued to the system since 9am, little did I realise its way past lunch time. Had no choice than order a take-away or prepare a quick meal. Well, let’s go with the latter.

Presenting, my all time favourite high protein meal with minimal ingredients available in the kitchen.

Egg spinach fried rice

Prep time : 10 minutes

Serves : 1

What do you need :

  1. Left over brown rice (I used approx 150 grams cooked rice)
  2. Organic eggs
  3. Handful of baby spinach

Start off with stir frying the spinach on an open pan with 1-2tsp of coconut oil for 30-40 seconds on high flame. Transfer it to a bowl, lower the heat and beat 3 eggs. Stir fry it for 1-2 minutes, add brown rice to the pan followed by spinach and cook for 1-2minutes. Add salt and pepper. A delicious meal is ready..!!
